15 MINUTE NDUJA KING PRAWN CASSOULET
A super speedy and delicious supper, tomato based with a slight kick from the Nduja. Perfect to mop up with some garlic bread.

Ingredients:
- 1 red pepper, roughly sliced
- 1 tbsp olive oil
- 2 garlic cloves, sliced
- 1 regular tomatoes, roughly sliced
- 2-3 tbsp Nduja
- 1/2 tsp oregano
- 1 tin of cannellini beans (with water) 400g
- 225g king prawns
- Basil to garnish
- Garlic bread to serve
- Parmesan to serve
Instructions:
Add the diced red pepper to a hot pan with the olive oil, once softened add the sliced garlic & Nduja frying for another 2-3 minutes.
Add the roughly chopped tomatoes, oregano & white beans with the liquid. Mix well and turn down to a simmer so it’s gently blipping away.
Taste for seasoning at this point and add salt and pepper if needed, I didn’t add any.
Finally add in the prawns and simmer for around 2-4 minutes until they’ve turned pink and firm.
Finish with fresh basil and a grating of Parmesan- optional.
Serve with garlic bread and scoop away!
