Ingredients-

The Sauce:

Mix in Bowl 1:

  • 4 tbsp ketchup

  • 4 tbsp white sugar

  • 4 tbsp cider vinegar

  • 1 tsp ginger, grated

  • 1 tsp garlic, grated

Mix in Bowl 2:

  • 1 tsp soy sauce

  • 1 tsp cornflour

  • 2 tbsp cold water

Additional Ingredients:

  • pork tenderloin

  • 2 peppers

  • 1 onion

  • rice


Instructions-

  1. Prepare the Sauce:

    • In Bowl 1, combine ketchup, white sugar, cider vinegar, grated ginger, and grated garlic. Mix well.

    • In Bowl 2, whisk together soy sauce, cornflour, and cold water. Set aside.

  2. Cook the Pork:

    • Slice the pork tenderloin thinly.

    • In a separate pan, add the thinly sliced pork and gently fry until browned and cooked through.

  3. Sauté Peppers and Onions:

    • In the same pan, add the chunky pieces of 2 peppers and 1 onion. Sauté them until they are softened. Once cooked, transfer them to a bowl.

  4. Prepare the Rice:

    • In a separate pot, fry 1 cup of basmati rice in a small amount of oil.

    • Add 2 cups of water, bring to a boil, cover with a lid, and let it cook for 10 minutes.

    • Allow the rice to rest for an additional 5 minutes.

  5. Finish the Dish:

    • Combine the peppers, onions, and cooked pork in the pan.

    • Add the red sauce mixture and simmer until it's hot.

    • Stir in the cornflour and soy mixture to thicken the sauce. Mix well.

  6. Serve:

    • Serve the sweet and sour pork over the fluffy rice.

    • Sprinkle with sesame seeds and chopped spring onions for a little extra.
