Ingredients-

- 6 tbsp extra virgin olive oil
- 8 garlic cloves finely sliced
- 200g pasta- spaghetti or linguine
- Handful fresh parsley, finely chopped
- Salt, 1/2 Tsp
- 1/2 Tsp Black pepper- fresh ground
- Parmesan- (optional 50-80g)


Instructions-

  1. Fill a pan with cold water, generously salt it, and bring it to a boil.

  2. In a large non-stick frying pan, heat the oil gently. The key to this dish is slowly bringing the garlic to temperature without burning, allowing it to turn lightly golden brown.

  3. Add the sliced garlic to the pan, ensuring it doesn't sizzle; a low heat is sufficient.

  4. Boil the pasta in the salted water.

  5. Once your kitchen is filled with the smell of garlic, add the cooked pasta directly from the pan, bringing with it the salted pasta water. Also, incorporate the freshly chopped parsley, salt, pepper, and grated Parmesan.

  6. Turn off the heat and gently fold the pasta until the liquid emulsifies, creating a creamy and delicious texture. Add more pasta water if needed.

  7. While Parmesan isn't traditional, it is an incredible addition that enhances the dish, especially if you're enjoying a glass of red wine with it.
