BACON & LEEK CANNELLINI BEAN STEW

Combining caramelized onions, bacon, leeks, potatoes, and Cannellini beans, simmered to perfection. Serve with crusty buttered bread.

Ingredients-

  • 1 onion, finely diced

  • 4 garlic cloves, grated

  • 1/4 tsp parsley

  • 1/4 tsp black pepper

  • 2 tbsp plain flour

  • 250g cooking bacon

  • 500g potatoes

  • 320g leeks

  • 400g Cannellini beans

  • 800ml water

  • 1/2 chicken stock cube (optional)


Instructions-

  1. Caramelize the diced onion in a little olive oil. Add the finely diced cooking bacon until golden, along with the grated garlic.

  2. Add the finely diced leeks and soften for a couple of minutes.

  3. Add flour, seasoning, and herbs. Fry for a couple of minutes before adding water.

  4. Add potatoes and Cannellini beans, mix well, and simmer on medium heat for around 1 hour.

  5. Once potatoes and beans are completely softened, taste for seasoning. Adjust as needed.

  6. Optionally, add half a stock cube, depending on the saltiness of the stew.

  7. Serve with crusty buttered bread.
