BACON & LEEK CANNELLINI BEAN STEW
Combining caramelized onions, bacon, leeks, potatoes, and Cannellini beans, simmered to perfection. Serve with crusty buttered bread.

Ingredients-
1 onion, finely diced
4 garlic cloves, grated
1/4 tsp parsley
1/4 tsp black pepper
2 tbsp plain flour
250g cooking bacon
500g potatoes
320g leeks
400g Cannellini beans
800ml water
1/2 chicken stock cube (optional)
Instructions-
Caramelize the diced onion in a little olive oil. Add the finely diced cooking bacon until golden, along with the grated garlic.
Add the finely diced leeks and soften for a couple of minutes.
Add flour, seasoning, and herbs. Fry for a couple of minutes before adding water.
Add potatoes and Cannellini beans, mix well, and simmer on medium heat for around 1 hour.
Once potatoes and beans are completely softened, taste for seasoning. Adjust as needed.
Optionally, add half a stock cube, depending on the saltiness of the stew.
Serve with crusty buttered bread.
