Ingredients-
6 tbsp Olive Oil
8 garlic cloves, finely sliced
200g Bacon, finely cubed
1/2 mug peas
200g spaghetti or linguine
Handful fresh parsley, finely chopped
1/2 tsp salt
1/2 tsp black pepper, freshly ground
50g-80g Parmesan
Instructions-
In a large pan, bring cold, heavily salted water to a boil for cooking the pasta.
In a large non-stick frying pan, add the olive oil and lightly heat it. Add the bacon to the pan and cook until it turns golden. The key to this dish is to slowly bring the sliced garlic to temperature without allowing it to burn, ensuring it turns lightly golden brown.
Add the sliced garlic to the pan and cook over low heat, avoiding sizzling.
While preparing the sauce, add the pasta to the boiling salted water and cook according to the package instructions.
In the last minute of cooking the pasta, add the peas to the boiling water. Drain the cooked pasta and peas, reserving a small amount of the salted pasta water.
Add the cooked pasta and peas directly to the pan with bacon and garlic, along with the freshly chopped parsley, salt, black pepper, and grated Parmesan if desired.
Turn off the heat and gently fold the pasta until the liquid emulsifies, creating a creamy sauce.
