BAKED BRIE & TOMATO PASTA
This easy-peasy Brie and Tomato Linguine is a flavour-packed dish that combines the rich creaminess of Brie with the robustness of roasted tomatoes. The sun-dried tomatoes and garlic add an extra layer of taste, tossed with linguine and fresh basil.

Ingredients-
450g tomatoes
5-6 sun-dried tomatoes
2 garlic cloves
1 tsp olive oil
1 tsp black pepper
1/2 tsp flaky salt
200g Brie
200g linguine
Small handful of basil
How to-
Halve the tomatoes and roast them with sliced garlic, olive oil, salt, and pepper. Roast at 180°C for 20-40 minutes, depending on ripeness.
Add Brie when tomatoes are soft enough to smash, and roast for an additional 2-3 minutes.
Boil linguine in salted water. Remove tomatoes and cheese from the oven, smash into a sauce.
Add linguine to the sauce and toss.
Stir in a large handful of chopped basil.
Optional: Add lemon juice to lighten the dish.
