BBQ SKIRT STEAK TACOS

Tender skirt steak with a flavourful BBQ rub and a variety of fresh toppings, all wrapped in mini tortilla wraps. The key to success with this dish is to cook the skirt steak to perfection, ensuring it's tender and packed with smoky BBQ flavour. Thinly slicing the steak across the grain is crucial for its tenderness.

Ingredients-

  • 1 pot of BBQ rub

  • 1 skirt steak

  • 1 tsp olive oil & 1 tbsp butter

  • Mini tortilla wraps

  • Baby leaf salad

  • Cucumber slices

  • Grated cheddar

  • Sour cream

  • Pickled chilis

  • 1 lime (to squeeze on at the end)


How to-

Coat the skirt steak with the BBQ rub. Refer to the video you've posted to see the amount of rub to use.

  1. Cook the skirt steak for around 10 minutes per side, depending on the thickness. Ensure the pan is sizzling but not too hot to burn the rub.

  2. Important: After cooking, you need to cut the skirt steak across the grain and try to cut the sections as thin as possible. This will keep the steak beautifully tender.

  3. Rest the cooked steak for 5 minutes before serving.

  4. Prepare your tacos by placing a portion of thinly sliced BBQ skirt steak onto mini tortilla wraps.

  5. Add baby leaf salad, cucumber slices, grated cheddar, sour cream, and pickled chilis to your liking.

  6. Squeeze a bit of lime juice on top of the tacos for a zesty kick.
