SLOW COOKER BEEF & POTATO CURRY

Chunks of beef, diced potatoes, and a mix of aromatic spices and seasonings. This slow cooker recipe ensures that the beef becomes incredibly tender and the flavours develop beautifully over several hours of cooking.

Ingredients-

  • 400g diced beef

  • 2 tbsp plain flour

  • 1 tsp salt

  • 1 tsp pepper

  • 2 regular potatoes

  • 1 rough-chopped onion

  • 2 red peppers

  • 4 garlic cloves

  • 1 tin chopped tomatoes

  • 200g coconut milk

  • 1 tsp cumin

  • 1 tsp coriander

  • 1 tbsp medium curry powder

  • 1/2 tsp ginger

  • 1 beef stock cube

  • 2 star anise

  • 2 dried chilies


Instructions-

  1. In a pan, brown the diced beef, which has been seasoned with plain flour, salt, and pepper. Also, brown the chopped onion.

  2. Add the spices (cumin, coriander, medium curry powder, and ginger), and fry them briefly. Deglaze the pan with the chopped tomatoes.

  3. Transfer the beef, onion, and tomato mixture to a slow cooker, and add the remaining ingredients from the list, including diced potatoes, red peppers, garlic cloves, coconut milk, a beef stock cube, star anise, and dried chilies.

  4. Cook the curry on high for 5-6 hours or on low for 8-10 hours, until the beef and potatoes are tender and the flavours blend.
