BEEF KEEMA HOTPOT

Ingredients-

  • 1 finely diced onion

  • 4 garlic cloves, diced

  • 2-3 inches grated ginger

  • 300-500g Beef Mince

  • 2-3 tbsp medium curry powder (Ensure its the supermarket curry powder not pure curry powder)

  • 1 tin chopped tomatoes

  • 300-400ml stock

  • 6-8 medium potatoes, sliced


Method-

  1. Fry off the onion, garlic, and ginger in oil until softened.

  2. Add the beef mince and brown, breaking up with a whisk ensures no lumps!

  3. Once browned, add the curry powder, then chopped tomatoes.

  4. Season with a little salt and pepper.

  5. Add the mixture to an oven-safe dish, layer the potatoes into a circle as per the video.

  6. Add the stock!

  7. Bake for 1 hour with a lid on and an additional 30 minutes without a lid at 150°C. This allows the potatoes to cook without burning.

  8. Caramelize onions to serve on top!
