BEEF KEEMA HOTPOT

Ingredients-
1 finely diced onion
4 garlic cloves, diced
2-3 inches grated ginger
300-500g Beef Mince
2-3 tbsp medium curry powder (Ensure its the supermarket curry powder not pure curry powder)
1 tin chopped tomatoes
300-400ml stock
6-8 medium potatoes, sliced
Method-
Fry off the onion, garlic, and ginger in oil until softened.
Add the beef mince and brown, breaking up with a whisk ensures no lumps!
Once browned, add the curry powder, then chopped tomatoes.
Season with a little salt and pepper.
Add the mixture to an oven-safe dish, layer the potatoes into a circle as per the video.
Add the stock!
Bake for 1 hour with a lid on and an additional 30 minutes without a lid at 150°C. This allows the potatoes to cook without burning.
Caramelize onions to serve on top!
