Ingredients:

  • 1 tsp sesame oil

  • 1 small chicken breast

  • 1/2 mug mixed vegetables (onions, peppers, peas, sweet corn, carrots, cooked broccoli/asparagus/green beans)

  • 1/2 mug cooked 1-2 day old cold rice

  • 1 egg

  • 1 tbsp dark soy sauce

  • 1 tsp light soy sauce

  • 2 tbsp oyster sauce

  • Coriander and sesame seeds for garnish


Instructions:

  1. Prepare Scrambled Egg:

    • Scramble the egg in a small amount of oil and set aside in a bowl.

  2. Cook Chicken and Vegetables:

    • Add sesame oil to the pan and finely dice and cook the chicken breast.

    • Add mixed vegetables and cook on high heat until chicken is done and vegetables are softened.

  3. Combine Egg and Rice:

    • Add the scrambled egg and cold rice to the pan.

    • Turn the heat to the highest setting and fry for about 2-3 minutes until piping hot.

  4. Add Sauces:

    • Pour in dark soy sauce, light soy sauce, and oyster sauce.

    • Mix well and continue frying for another 2 minutes.

  5. Final Touch:

    • Ensure the dish is piping hot and well-mixed.

    • Garnish with fresh coriander and sesame seeds.
