Ingredients:
1 tsp sesame oil
1 small chicken breast
1/2 mug mixed vegetables (onions, peppers, peas, sweet corn, carrots, cooked broccoli/asparagus/green beans)
1/2 mug cooked 1-2 day old cold rice
1 egg
1 tbsp dark soy sauce
1 tsp light soy sauce
2 tbsp oyster sauce
Coriander and sesame seeds for garnish
Instructions:
Prepare Scrambled Egg:
Scramble the egg in a small amount of oil and set aside in a bowl.
Cook Chicken and Vegetables:
Add sesame oil to the pan and finely dice and cook the chicken breast.
Add mixed vegetables and cook on high heat until chicken is done and vegetables are softened.
Combine Egg and Rice:
Add the scrambled egg and cold rice to the pan.
Turn the heat to the highest setting and fry for about 2-3 minutes until piping hot.
Add Sauces:
Pour in dark soy sauce, light soy sauce, and oyster sauce.
Mix well and continue frying for another 2 minutes.
Final Touch:
Ensure the dish is piping hot and well-mixed.
Garnish with fresh coriander and sesame seeds.
