BROWN BUTTER CAULIFLOWER CHEESE

Yes it can be made without the chorizo and you can also swap chorizo for pancetta, this time I made a brown butter roux and the flavour is something different.

Ingredients-

- 1 whole broccoli, cut into florets
- 1 whole cauliflower, cut into florets
- 1/2 ring chorizo, finely diced- can replace with pancetta/bacon
- 1 tsp olive oil
- 1/2 tsp salt & pepper
- 50g butter
- 50g plain flour
- 500ml milk
- 200g strong cheddar (1/2 in sauce, 1/2 sprinkled)
- 1 tbsp American or Dijon mustard
- 1 tsp Worcestershire sauce


How to-

Cut both your broccoli and cauliflower into florets and drizzle over the oil salt and pepper and toss well to fully coat.
Add to the oven and roast at 200•c for 20-25 minutes.

Peel and finely diced your chorizo and cook in a pan until crispy. Drain the fat and leave aside (keep the fat which is essentially flavoured butter for another recipe)

Make your brown butter cheese sauce by adding your butter to a pan and allow to melt, take this further allowing to bubble until the butter turns into a nutty brown colour. You can see the milk solids turn into specs if brown and the remaining butter is a clear golden amber liquid.
Add your flour and whisk well then gradually whisk in all of your milk.
Finish your cheese sauce with the mustard, Worcestershire then add in half of your grated cheese off the heat, taste the sauce after you’ve added, you can always add more if you like it extra cheesy.
Add your roasted broccoli and cauliflower to an oven dish and sprinkle over half of the chorizo, extra cheese and pour over your cheese sauce, finish with more chorizo and grated cheese.
Bake for an additional 10 minutes at 200•c.
