Welcome to “5 for under £30,” a series of recipes to shop & cook 5 meals, each serving 4 people for under £30. The ingredients collected each week will be supplied from a different shop. This is Week 2, the items collected for these five recipes are from ASDA.

The items for all five recipes were bought at the same time so the prices I post are accurate as of the date of purchase, please note that these items may fluctuate on price depending on the date you have purchased your ingredients.

NB - These recipes also require the use of some store cupboard standard ingredients which do not appear on the shopping list, for example: Sauces, herbs, stock cubes, salt etc.

The 1kg Long Grain Rice and the Tinned Kidney Beans are missing from this photo due to no stock when I did the shop but are still included in the pricing.

I have tried to find the best balance for quality and value for money, some ingredients cost a little extra to ensure the meals hit their best potential on taste. If preferred, these items can be interchanged with a cheaper alternative of your choice:

  • 12 Richmond Pork Sausages - I spent a little extra for the sausages basically just for the overall quality of the meat, there are cheaper and more expensive alternatives.

  • Chicken Mince - I went for the “Asda Chicken Mince” but if you prioritise the meat quality it’s worth spending more for a branded product.

  • Beef Mince - I bought the “Asda Beef & Pork Mince,” if you can afford to, I would go for the slightly more expensive just beef mince. Remember to try and match the weight.

  • Greek Style Salad Cheese - Depending on your budget, choose a more premium Feta cheese if you are able to.

 

The two packs of mince came as part of the “2 for £8” meat deal, with a saving of £0.80 from the total price.

As it’s not always possible to use up 100% of the items, there will be some recipes which will have leftover product. Some items will not be completely used due to their excessive quantity or weight.

Week 2 - Asda

March 2024

 

Cheesy Beef Taco Pasta, Serves 4

Prep Time: 10 minutes
Cook Time: 20 minutes
Total Time: 30 minutes

Total Cost: £4.21

Ingredients:

  • 1 Onion, diced £0.33

  • 2 Red Peppers, diced £1.06

  • 250g Mince Beef/Pork £1.47

  • 1 Tin of Chopped/Plum Tomatoes £0.35

  • 250g Pasta £0.38

  • 100g Cheddar Cheese £0.62

Store Cupboard:

  • 3 tsp Garlic Powder

  • 1 tbsp Plain Flour

  • 200ml Milk

  • 1 tbsp Tomato Purée

  • 2 tsp Chilli Powder

  • 3 tsp Ground Cumin

  • 3 tsp Paprika

  • 1/2 tsp Salt

  • 1/2 tsp Black Pepper

  • 1 tsp Dried Oregano

 

Instructions:

  1. Begin by softening the diced onion, peppers, and garlic in a small amount of oil.

  2. In a separate pan, boil the Spirali pasta in salted water until al dente. Drain and set aside.

  3. In a different pan, add the lean mince beef and brown it. Once browned, stir in the taco seasoning and plain flour.

  4. Add the milk to the beef mixture and mix well. Then, incorporate the tomato purée and the tin of chopped or plum tomatoes.

  5. Combine the cooked pasta with the beef and sauce mixture and transfer the mixture into an oven-safe dish, I like to do a layer of pasta, layer of beef, cheese and repeat one more time.

  6. Top the pasta with grated cheddar cheese and place it under the grill for about 5 minutes, or until the cheese is bubbly and golden.

  7. Serve and enjoy your delicious Cheesy Beef Taco Pasta!

 
 

 
 

Sweet Chilli Chicken Burgers (Cheese Stuffed) with Wedges, Serves 4

Prep Time: 30 minutes
Cook Time: 40 minutes
Total Time: 1 hour 10 minutes

Total Cost: £5.33

Ingredients:

  • 400g Chicken Mince £2.00

  • 1 kg Maris Piper Potatoes £0.78

  • 4 Brioche Buns £1.00

  • 150g Cheddar Cheese £0.93

  • 2 Tomatoes £0.62

  • 1/4 of the Cucumber

Store Cupboard:

  • 6 tbsp Breadcrumbs (I used crushed cornflakes)

  • 4 tbsp Sweet Chilli Sauce

  • 2 tsp Paprika

  • 1 tsp Dried Parsley

  • 1 tbsp Olive Oil

  • 2 tsp Garlic Granules

  • 2 tsp Oregano

  • Salt

Instructions:

  1. Preheat the oven to 200°C (392°F).

  2. Slice the potatoes into wedges and place them in a large bowl. Add 1 tbsp olive oil, 2 tsp garlic granules, 2 tsp oregano, and 1 tsp salt. Toss to coat the potatoes evenly.

  3. Arrange the potato wedges on a baking tray and roast them in the preheated oven for 40 minutes- mix these half way through moving the outer wedges to the centre.

  4. In a large bowl, combine the chicken mince with paprika, dried parsley, breadcrumbs, sweet chilli sauce, and a pinch of salt. Mix until well combined.

  5. Divide the chicken mince mixture into 4 portions and shape them into burger patties.

  6. Cut the cheddar cheese into 8 slices. Place two slices together, then cut off the edges to create circular shapes. Place each pair of cheese slices on top of a burger patty, then shape the mince around the cheese to create stuffed burgers.

  7. Place the burger patties in the refrigerator for 10 minutes to allow them to set.

  8. While the burgers are chilling, slice the brioche buns, tomatoes, and cucumber.

  9. Heat a small amount of oil in a frying pan over low to medium heat. Fry the burger patties for about 6 minutes on each side, or until fully cooked. Use a meat thermometer to ensure they reach a safe internal temperature (Above 75°c)

  10. Serve the burgers on the sliced brioche buns with extra sweet chilli sauce, mayonnaise, sliced tomatoes, cucumbers, and roasted potato wedges.

Chilli Meatball Rice Bowls, Serves 4

Prep Time: 20 minutes
Cook Time: 20 minutes
Total Time: 40 minutes

Total Cost: £5.50

Ingredients:

  • 500g Mince Beef/Pork £2.93

  • 150g Cheddar Cheese £0.93

  • 2 x Tins of Chopped Tomatoes £0.70

  • Asda Kidney Beans 400g £0.49

  • 1 Onion £0.33

  • 250g Long Grain Rice £0.12

Store Cupboard:

  • 1 Chilli Powder

  • 4 tsp Garlic Powder

  • 1 tsp Oregano

  • 1 tsp Cumin

  • 1 tsp Coriander

  • 3 tsp Paprika

  • 1/2 tsp Cinnamon

  • Salt

 

Instructions:

  1. Prepare the Meatballs:

    • In a bowl, mix the minced meat with 1 tsp garlic powder, 1 tsp dried oregano, 2 tsp paprika, and salt.

    • Form the mixture into mini meatballs, approximately 2cm in diameter.

  2. Cook the Rice:

    • In a saucepan, toast the rice with a pinch of salt and 1 tsp oil for about 5 minutes until it starts to turn golden.

    • Add the kidney beans and water to the saucepan, and bring to a boil.

    • Boil for exactly 10 minutes, then remove from heat and let it sit, covered, for an additional 5 minutes.

  3. Brown the Meatballs:

    • In a frying pan, heat a splash of oil over medium heat.

    • Add the meatballs and brown them on all sides. Once browned, remove them from the pan and set aside.

  4. Prepare the Sauce:

    • In the same pan used for the meatballs, add the diced onion and cook until caramelized, for about 10 minutes.

    • Add chilli powder, garlic powder, dried oregano, ground cumin, ground coriander, paprika, ground cinnamon, and salt to the pan. Cook for a couple of minutes.

    • Stir in the canned tomatoes and let the sauce simmer for about 10-15 minutes. Taste and adjust seasoning as needed.

    • Return the browned meatballs to the sauce and let them simmer together.

  5. Serve:

    • Serve the meatballs and sauce over the cooked rice.

    • Sprinkle grated cheddar cheese on top.

    • Enjoy your twist on chilli con carne!

 
 

 
 

Greek Chicken Kofta & Lemon Potatoes, Serves 4

Prep Time: 20 minutes
Cook Time: 40 minutes
Total Time: 1 hour

Total Cost: £4.85

Ingredients:

  • 400g Chicken Mince £2.00

  • 1 kg Potatoes £0.78

  • 2 Lemons £0.46

  • 1/2 Block of Feta Cheese £0.43

  • Cucumber Portion £0.55

  • 2 Tomatoes £0.63

Store Cupboard:

  • 2 tsp Oregano

  • 1 tsp Dried Mint

  • 2 tsp Garlic Powder

  • 1 tsp Cumin

  • 1 tbsp Coriander

  • 4 tbsp Breadcrumbs (I used crushed cornflakes)

  • Salt & Pepper

  • 400ml Chicken Stock

Instructions:

  1. Preheat your oven to 180°C (350°F).

  2. Dice the potatoes into 1 cm cubes and place them in a large bowl.

  3. In the same bowl with the potatoes, add the chicken stock, zest and juice of 1 lemon, dried oregano, salt, and pepper. Mix well to combine.

  4. Transfer the potato mixture to a baking dish and roast in the preheated oven for 40 minutes, stirring halfway through.

  5. While the potatoes are roasting, prepare the chicken koftas. In another bowl, combine the chicken mince, breadcrumbs, 1/2 lemon zest, 1 1/2 tsp oregano, dried mint, 1 1/2 tsp garlic powder , ground cumin, ground coriander, pinch of salt, and pepper. Mix until well combined (reserve 1/2 tsp oregano and garlic powder for the salad)

  6. Divide the chicken mixture into 16 portions and shape each portion into small rounds.

  7. Set aside the chicken koftas and prepare the salad. Dice the cucumber and tomato into fine cubes and crumble half of the feta cheese into the bowl.

  8. Add 1 tsp olive oil, 1/2 tsp dried oregano and 1/2 tsp garlic powder, pinch salt and a squeeze of 1/4 lemon to the salad ingredients. Mix well to combine.

  9. When the potatoes are almost cooked, heat a pan over medium heat and cook the chicken koftas for 2-3 minutes on each side until golden brown and cooked through.

  10. Optionally, add a splash of water and a knob of butter to the pan to add extra flavour to the koftas whilst keeping them moist.

  11. Serve the roasted lemon potatoes (finish with more lemon juice) with the cooked chicken koftas and the prepared salad. Enjoy your meal!

 
 

 

Cajun Sausage Pasta, Serves 4

Prep Time: 10 minutes
Cook Time: 15 minutes
Total Time: 25 minutes

Total Cost: £4.38

Ingredients:

  • 8 Richmond Sausages £1.67 (defrosted)

  • Half Fat Creme Fraiche £0.89

  • 250g Pasta £0.38

  • 1 Pepper £0.53

  • 1 Tin of Tomatoes £0.35

  • 1 Onion £0.33

  • 1 Lemon £0.23

Store Cupboard:

  • 3 tsp Cajun spice

  • Salt

  • Olive Oil

 

Instructions:

  1. Heat a small amount of olive oil in a large frying pan over medium heat. Add the finely diced onions and sauté until softened.

  2. Meanwhile, bring a separate pot of salted water to the boil and cook the pasta in salted water according to package instructions until al dente.

  3. Once the onions are softened, add the sausages to the pan. Break up the sausages with a spoon or spatula and brown them well.

  4. Sprinkle Cajun spices over the browned sausages and season with a pinch of salt.

  5. Add the diced peppers to the pan and stir to combine with the sausages. Then pour in the chopped tomatoes and mix well.

  6. Once the pasta is cooked, drain it well and add it to the pan with the sausage and pepper mixture. Add a splash of pasta water to loosen the sauce if needed, and toss everything together until the pasta is coated evenly.

  7. Lower the heat to medium and add the creme fraiche to the pan. Stir until everything is well combined. Allow the mixture to simmer gently whilst the pasta finishes cooking.

  8. Optional: If desired, sprinkle grated cheese over the top of the pasta and place the pan under the grill until the cheese is golden and bubbly.

  9. Serve the Cajun sausage pasta hot, with fresh lemon wedges on the side for squeezing over the dish. Enjoy!
