BUTTERMILK CHICKEN BURGER

Chicken breast coated in a buttermilk marinade and crispy outer layer. Assembled on a soft burger bun with fresh lettuce and tomatoes, this burger is a perfect chicken burger. But that's not all; the meal is taken to the next level with a side of loaded fries, generously smothered in a rich and cheesy jalapeño sauce. It's a combination of crispy, cheesy, and slightly spicy.

Ingredients-

Wet Burger Mix:

  • 2 chicken breasts

  • 4 tbsp natural yoghurt

  • 1/2 lemon juice

  • 1 tsp smoked paprika

  • 1 tsp garlic powder

  • 1/2 tsp cumin

  • 1/2 tsp mild chili powder

  • 1 tbsp apple cider vinegar

Dry Burger Mix:

  • 60g plain flour

  • 60g cornflour

  • 1 tsp smoked paprika

  • 1 tsp garlic powder

  • 1/2 tsp cumin

  • 1/2 tsp mild chili powder

  • 1/2 tsp salt

  • 1/2 tsp pepper

Additional Ingredients:

  • 2 burger buns

  • Lettuce for the burger

  • Tomatoes for the loaded fries and burger

  • Red onion for the loaded fries

  • Mayonnaise

  • Chipotle chili paste

  • Cheese (for on the chicken burger)

Loaded Fries:

Cheese Jalapeño Sauce:

  • 1 tbsp butter

  • 1 tbsp plain flour

  • 150ml milk

  • 80g double Gloucester

  • 50g smoked cheese

  • 10 jalapeño slices, finely diced


How to-

Crispy Buttermilk Chicken Burger:

  1. Prepare the Wet Burger Mix: In a bowl, combine the natural yogurt, lemon juice, smoked paprika, garlic powder, cumin, mild chili powder, and apple cider vinegar. This mixture acts as a buttermilk substitute.

  2. Prepare the Dry Burger Mix: In a separate bowl, mix together the plain flour, cornflour, smoked paprika, garlic powder, cumin, mild chili powder, salt, and pepper.

  3. Coat the Chicken: Dip the chicken breasts into the wet burger mix, ensuring they are well coated, and then dredge them in the dry burger mix. Make sure the chicken is thoroughly coated.

  4. Fry the Chicken: Heat oil for frying in a pan and fry the coated chicken breasts for about 4-5 minutes on each side or until they are golden brown and cooked through. Use a meat thermometer to ensure the chicken reaches the correct internal temperature.

  5. Assemble the Burger: Place lettuce and tomato on the burger buns, add the crispy buttermilk chicken, and any additional toppings you prefer, such as red onion and mayonnaise. Optionally, add cheese to the chicken.

Loaded Fries:

Cheese Jalapeño Sauce:

  1. In a saucepan, melt 1 tablespoon of butter over medium heat.

  2. Add 1 tablespoon of plain flour and stir to form a roux.

  3. Gradually pour in 150ml of milk, stirring continuously to avoid lumps.

  4. Add 80g of double Gloucester cheese and 50g of smoked cheese. Continue to stir until the cheese is fully melted and the sauce is smooth.

  5. Stir in 10 finely diced jalapeño slices for some extra heat.

To Serve:

  1. Prepare your fries or chips by frying them in oil until they are golden brown and crispy.

  2. Serve the loaded fries by drizzling the cheese jalapeño sauce over the fries.

  3. Optionally, sprinkle some fresh coriander on top for added flavour.

  4. Serve the loaded fries alongside the Crispy Buttermilk Chicken Burger.
