CAJUN CHICKEN AND HALLOUMI PAELLA
A vibrant one-pan meal that combines the bold flavours of Cajun-spiced chicken with the creaminess of grilled Halloumi cheese, all nestled in a bed of savoury paella rice. Quick and easy with a delightful twist.

Ingredients-
2 chicken breasts, diced
1 Tsp paprika
1 tbsp Cajun spices
150g paella rice
1 chicken stock cube
450ml hot water
1 pepper
Small handful frozen peas
1 red onion, finely diced
3 garlic cloves
1 block Halloumi plus coriander & lime garnish
Instructions-
In a large pan, heat 1 tbsp of oil and sauté the finely diced red onion and garlic until golden and soft.
Add the paella rice to the pan and fry for about a minute.
In a bowl, combine the diced chicken breast with paprika and Cajun spices, ensuring the chicken is evenly coated.
Add the seasoned chicken to the pan and lightly brown it.
Stir in the chicken stock, chopped peppers, and frozen peas.
Cook uncovered on medium heat for about 10 minutes.
If you don't have a lid, create a foil lid and simmer for an additional 10 minutes until the rice is fully cooked.
After a total of 20 minutes of cooking, remove the foil and add the sliced Halloumi. Sprinkle half a teaspoon of Cajun spices on the Halloumi and drizzle some olive oil. Press the Halloumi into the rice and grill for an extra 5 minutes.
Finish with fresh chopped coriander and serve with lime wedges.
