CAJUN CHICKEN & HALLOUMI PASTA

A light & moreish pasta salad. Mix in the lettuce & cucumber in last thing if you are preparing ahead for lunch.

Ingredients:

  • 2 chicken breasts, diced

  • 1 block halloumi, cubed

  • 120g fusilli pasta

  • 1 small little gem lettuce, shredded

  • 1/2 cucumber, chopped

  • 1 tbsp Cajun spice

Dressing-

  • 2 tbsp mayonnaise

  • 2 tbsp natural yoghurt

  • 1 tsp olive oil

  • 1 tsp Cajun spice

  • 1/2 lemon juice

  • 50ml water


Instructions:

  1. Add the pasta to a pan of salted boiling water and boil for the amount of time instructions specify.

  2. Add the diced chicken breast and halloumi to a mixing bowl along with a pinch of salt and 1 tbsp Cajun spice.

  3. Fry the chicken and halloumi in a frying pan along with a splash of oil until browned, golden and fully cooked.

  4. Shred and wash the lettuce and dice your cucumber.

  5. Mix the pasta salad dressing then combine all sections of the dish together, serve and demolish!
