CAJUN DIRTY RICE
A one-pan meal that combines sausages (or your preferred protein) with a blend of vegetables and Cajun spices. It's a quick and easy dish with a spicy kick.

Ingredients-
6 peppery sausages (or any protein of your choice)
1 carrot, finely diced
1 pepper, finely diced
2 stalks celery, finely diced
1 Tsp oregano
1-2 tsp Cajun spices
1 chicken stock cube
1 cup rice
2 cups water
Instructions-
Finely dice the vegetables and fry them along with the sausages until the sausages are browned. If you want crispy sausage on top, set aside half of a sausage to fry until crispy later.
Once the vegetables are soft and the sausages are browned, add the oregano and Cajun spices. Mix and fry, then add the rice.
After frying for 2 minutes, add the stock and water. Cover with a lid and cook for exactly ten minutes.
After ten minutes, remove from heat, but keep the lid on to continue cooking for 5-10 more minutes.
In the meantime, fry the broken up sausage until crispy.
Finish the dish with fresh lime juice and chopped parsley.
