CHAR SUI PORK

A classic Chinese dish known for its sweet and savoury flavour, tender texture, and vibrant red colour. The secret to its tastiness is the marination process, allowing the pork to soak up the rich flavours of the marinade. The marinade includes a mix of soy sauce, honey, ketchup, brown sugar, rice wine or cider vinegar, oyster sauce, five spice, and red food colouring. The marinated pork is then cooked, creating a glossy and sticky glaze that coats the slices of tender pork. Serve Char Siu Pork with rice, noodles, or as a topping for ramen.

Ingredients-

Marinade:

  • 60ml light soy

  • 60ml honey

  • 30ml ketchup

  • 25g brown sugar

  • 20ml rice wine or cider vinegar

  • 3 tbsp oyster sauce

  • 1 tbsp five spice

  • 1 tbsp red food colouring

Pork:

  • 1 full pork fillet or tenderloin, cut in half

  • 1 tbsp vegetable oil (for frying)


Instructions-

Marinade:

  1. In a bowl, mix all the marinade ingredients together: light soy, honey, ketchup, brown sugar, rice wine or cider vinegar, oyster sauce, five spice, and red food colouring.

  2. In a food bag, add the marinade and a full pork fillet or tenderloin cut in half. Seal the bag and refrigerate for 2 days to allow the flavours to penetrate the pork.

Cooking Day:

  1. On the cooking day, remove the marinated pork from the bag.

  2. Transfer the marinade from the bag to a pan and simmer until it thickens and becomes glossy.

  3. Heat 1 tbsp of vegetable oil in a pan and fry the pork for about 2-3 minutes per side until it's nicely browned.

  4. Place the pork in an oven preheated to 180°C for 15 minutes, covered in the beautiful sticky glaze.

  5. Once cooked, remove the pork from the oven, slice it finely, and serve with more of the sticky glaze. It can be enjoyed with rice, noodles, or served on top of ramen.
