CHEESY BEEF TACO PASTA
A fusion of classic Italian pasta and bold Tex-Mex flavours. This quick and easy recipe combines seasoned lean beef, sautéed vegetables, and creamy cheddar cheese with tender Conchiglie pasta. The rich, cheesy topping adds a finishing touch to this hearty and comforting meal.

Ingredients-
1 onion, diced
2 red peppers, diced
3 garlic cloves, roughly chopped
250g lean mince beef
1 tablespoon plain flour
200ml milk
1 tablespoon tomato purée
1 tin chopped/plum tomatoes
1 sachet taco seasoning (30g)
200g Conchiglie Pasta
100g cheddar cheese
Instructions-
Begin by softening the diced onion, peppers, and garlic in a small amount of oil.
In a separate pan, boil the Conchiglie pasta in salted water until al dente. Drain and set aside.
In a different pan, add the lean mince beef and brown it. Once browned, stir in the taco seasoning and plain flour.
Add the milk to the beef mixture and mix well. Then, incorporate the tomato purée and the tin of chopped or plum tomatoes.
Combine the cooked pasta with the beef and sauce mixture and transfer the mixture into an oven-safe dish.
Top the pasta with grated cheddar cheese and place it under the grill for about 5 minutes, or until the cheese is bubbly and golden.
