CHEESY CHORIZO PASTA
A quick-to-make dish that combines the smoky richness of chorizo with creamy cheese and perfectly cooked pasta. It works great for a simple weeknight dinner or a dish for guests.

Ingredients-
1/2 onion, finely diced
120g sliced chorizo
2 garlic cloves, finely diced
1 large tomato
2 tbsp cream cheese
300ml chicken stock
100g cheddar cheese
150g dried pasta/fusilli
Instructions-
Start by boiling the pasta in salted water until it's cooked to your desired level. Drain the pasta and set it aside.
In a separate pan, soften the diced onion, and add most of the sliced chorizo, leaving some aside for topping the pasta and baking.
Add the finely diced garlic cloves and the large tomato to the pan. Allow them to simmer and soften.
Incorporate the cream cheese and chicken stock into the pan, and stir until they are well combined.
Grate the cheddar cheese and set some aside for later. Add the cooked pasta to the pan and mix it well with the sauce.
Sprinkle the remaining cheddar cheese on top of the pasta. Place the reserved chorizo slices on top for a flavourful touch.
Place the pan under the grill (broiler) for about 2 minutes to melt and brown the cheese.
Serve your Cheesy Chorizo Pasta while it's still hot and enjoy!
