CHEESY CAJUN CHICKEN THIGH BURGER

This Cheesy Cajun Chicken Thigh Burger is a combination of crispy chicken thighs coated in a Cajun seasoning and crushed cheesy tortilla chips. It's served on a soft brioche bun with fresh lettuce and juicy tomatoes. It’s a crispy, spicy, and cheesy burger that's quick and easy to create.

Ingredients-

  • 2 boneless, skinless chicken thighs

  • 2 tablespoons sour cream or plain yogurt

  • 1 1/2 tablespoons Cajun spices

  • A pinch of salt and pepper

  • 1 bag of cheesy tortilla chips (cheaper ones work well)

  • 2 brioche buns

  • Cheese

  • Little Gem lettuce

  • Tomatoes


Instructions-

  1. Ensure the chicken thighs are de-boned and the skin is removed. Sprinkle a little Cajun seasoning on each thigh.

  2. In a small bowl, mix sour cream or yogurt with Cajun spices, salt, and pepper. Coat the chicken thighs with this mixture.

  3. Crush the bag of tortilla chips. You can use a rolling pin to crush them finely.

  4. Coat each chicken thigh with the spiced yogurt mixture and then press it into the crushed tortilla chips, ensuring it's well coated.

  5. Bake the chicken thighs at 180°C (350°F) for 20-25 minutes until they're cooked through and the coating is golden. Alternatively, you can pan-fry them for about 5 minutes per side until they're crispy and cooked through.

  6. While the chicken is cooking, prepare the brioche buns by cutting them in half and toasting them lightly if desired.

  7. When the chicken is ready, remove it from the oven or pan and let it rest for a minute.

  8. If you like, you can add a slice of cheese on top of each chicken thigh and place them back in the oven for a couple of minutes to melt the cheese.

  9. Assemble the burger: Place a chicken thigh (with or without melted cheese) on the bottom half of the brioche bun. Top it with lettuce, sliced tomatoes, and the top half of the bun.

  10. Serve your Cheesy Cajun Chicken Thigh Burger alongside your favourite sides.
