CHEESY CHICKEN FAJITA BAKED SPAGHETTI

As you bake them alongside a blend of spaghetti, peppers, and onions, the result is a fusion of cheesy and zesty fajita spice. With a simple and straightforward process, this dish is both easy and delicious.

Ingredients-

For the Spaghetti:

  • 250g Spaghetti (1/2 pack)

  • 1 pepper, diced

  • 1 onion, diced

  • 500g passata (if your jar/tub is 400g, add 100ml extra water)

  • 1 tbsp fajita seasoning

  • 300ml chicken stock

For the Cheesy Chicken:

  • 2 chicken breasts

  • 2 tbsp chopped tomatoes (1 tbsp per chicken breast)

  • 4 tbsp fine grated cheddar cheese

  • 3 slices cheddar cheese

  • 6 slices pickled jalapeño

  • Plain flour

  • Fajita seasoning


Instructions-

  1. Start by creating a pocket in each chicken breast with a sharp knife for the cheese.

  2. Add the cheese into the pockets, breaking it up as needed to fit.

  3. Mix 1/2 tsp of fajita seasoning with 1 tsp of olive oil, and use this mixture to season the chicken breasts.

  4. Once the chicken is seasoned, set it aside.

  5. In a large baking dish, combine the diced peppers, diced onions, spaghetti, fajita seasoning, and chicken stock. Cover the dish with foil and bake in the oven at 190°C for 25 minutes while you prep the chicken.

  6. Add the finely diced tomatoes (1 tbsp per chicken breast) on top of the chicken, followed by the grated cheese. Finish by placing the pickled jalapeño slices on top. You can do this part once the chicken is in the tray.

  7. Remove the pasta from the oven and mix it thoroughly, separating any strands that may have stuck together. Add a splash of water if needed to loosen it.

  8. Once the pasta is separated, add the seasoned chicken to the tray.

  9. Bake the entire dish, uncovered, for another 20-25 minutes, depending on the size of your chicken breasts. Make sure the chicken reaches a safe internal temperature of 75°C for 30 seconds. You can use a meat thermometer to check, ensuring it goes past the red zone OR 75°c.

  10. Alternatively, cut into the thickest part of the chicken to ensure it's cooked through.
