CHEESY GREENY PASTA

A blend of spinach, garlic, Parmesan, almonds, basil, and a touch of seasoning. It’s brought together with pasta water, forming a creamy sauce that covers every strand of pasta.

Ingredients-

  • 1 onion, finely diced

  • 200g cooking bacon, diced

  • 150g quick-cook fusilli

  • 1/2 head broccoli, cut into florets

Sauce (to be blended):

  • Large handful fresh spinach

  • 1 garlic clove

  • 75g Parmesan

  • 100g almonds/nuts (Alternatives: Pine nuts - toast them first - or sesame seeds)

  • 10-12 basil leaves

  • Pinch of salt & pepper

  • 100-150ml pasta water


How to-

  1. In a pan with a little oil, cook finely diced onion and bacon until caramelized. The mixture may become wet initially, but as the liquid evaporates, continue cooking until golden. Add a small amount of oil if needed during cooking.

  2. In a separate saucepan, boil quick-cook fusilli and broccoli.

  3. Blend all sauce ingredients in a jug: spinach, garlic, Parmesan, almonds, basil, salt, pepper, and 100-150ml pasta water.

  4. Once the onion and bacon are golden, add the cooked pasta and broccoli, followed by the blended sauce. Simmer for around 3-5 minutes.
