CHICKEN & CHORIZO ONE PAN LASAGNE
This quick dish brings together the smokiness of diced chorizo, the tenderness of chicken thighs, and the aromatic blend of herbs and spices. The lasagne sheets soak up the savoury taste, while gooey mozzarella and Parmesan add a cheesy finish.

Ingredients-
1 onion, finely diced
3 garlic cloves
50g diced chorizo
2 chicken thighs
1 tsp oregano
1 tsp paprika
Salt & pepper, to taste
Pinch of love (optional, but highly recommended)
1 tin tomatoes
200ml chicken stock
5 lasagne sheets
1 ball mozzarella
Parmesan
Instructions-
Begin by softening the diced onion, garlic, chorizo, and chicken in a pan. This quick-cook method ensures the infusion of flavourful oils.
Once the chicken is cooked and the onions are softened, introduce the tinned tomatoes, oregano, paprika, and chicken stock. Simmer on low heat to let the flavours meld.
Break the lasagne sheets into thirds and submerge them into the simmering liquid. Cook for approximately 10 minutes, ensuring separation of the sheets.
As the pasta cooks, add blobs of Mozzarella and finish the dish with a generous sprinkle of grated Parmesan and fresh basil.
