CHICKEN & CHORIZO STEW

Succulent chicken thighs, spicy chorizo, and wholesome vegetables. Set it and forget it, allowing the slow cooker to do the job for you. A perfect dish for busy days.

Ingredients-

  • 5-6 boneless & skinless chicken thighs

  • 1/2 ring chorizo, diced

  • 4 garlic cloves, peeled and rough chopped

  • 1 small red onion, rough chopped

  • 2 peppers, rough chopped

  • 500g New Potatoes

  • 1 tin chopped tomatoes

  • 1 tin chicken stock (use the tomato tin)

  • 2 tsp paprika

  • 2 tsp oregano

  • 1 tsp thyme

  • 1 tsp salt

  • 1 1/2 tsp black pepper


Instructions-

  1. Brown the chicken thighs in a little oil, seasoned with a small amount of salt and pepper. Transfer to the slow cooker.

  2. In the same pan, add the chorizo, onion, peppers, and garlic. Fry for 2 minutes to deglaze the pan, then add to the slow cooker.

  3. Add the chunky-diced new potatoes, chopped tomato, stock, and seasonings to the slow cooker.

  4. Turn the slow cooker on low for 8-10 hours or high for 5 hours.
