CHICKEN & CHORIZO TRAYBAKE
A one-pan dish that brings together chicken breasts, smoky chorizo, and a mix of ingredients like rice, sun-dried tomatoes, and fresh vegetables. This easy and delicious meal is a perfect addition to your weeknight dinner rotation.

Ingredients-
4 chicken breasts
1 chorizo sausage, cut into chunky pieces
180g basmati rice
450ml water
1 chicken stock cube
1 teaspoon oil
1 small jar of sun-dried tomatoes
1/3 red onion, sliced
1 fresh tomato, chopped
1 red pepper, chopped
2 limes
Fresh parsley for garnish
Salt and pepper to season
Additional vegetables and garlic bread for serving
Instructions-
Step 1: Preparing the Traybake
Preheat your oven to 190°C.
In an ovenproof tray, add 180g of basmati rice and crumble 1 chicken stock cube & water over it.
Dot the tray with chunks of chorizo, slices of red onion, chopped fresh tomato, and red pepper.
Add 1 small jar of sun-dried tomatoes to the tray, distributing them evenly.
Step 2: Arranging the Chicken
Place the 4 chicken breasts on top of the ingredients in the tray.
Season the chicken with salt and pepper to taste.
Step 3: Baking the Traybake
Cover the tray with a layer of tightly fitting foil.
Bake the tray in the preheated oven at 190°C for 25 minutes.
Step 4: Rest and Finish
After baking, let the traybake rest for 5 minutes.
While it's resting, gather additional vegetables and garlic bread, and prepare them if needed.
Step 5: Finishing Under the Grill
To achieve a delightful brown finish, place the tray under the grill for a couple of minutes.
Step 6: Serving the Traybake
Garnish the Chicken and Chorizo Traybake with fresh parsley.
Serve it hot, along with additional vegetables and garlic bread, if desired.
Squeeze the juice from 2 limes over the traybake to enhance the flavours.
