CHICKEN & SWEET POTATO DAHL

Ingredients
- 1 tin coconut milk
- 2 tins chopped tomatoes
- 500g chicken mince
- 1 onion, diced
- 2 peppers diced
- 12 tbsp red lentils
- 1 sweet potato, peeled and diced (replace with regular potato if you don’t like sweet, about 2 medium)
- 8 level tbsp medium curry powder
- 1 tsp garlic granules
- 1/2 tbsp turmeric
- 4 tbsp peanut butter
- 200ml chicken stock
Method
You are going to want to launch it all into the slow cooker, turn on low for 8 hours or high for 5.
Mix well half way through and again once finished.
Check for seasoning and serve with natural yoghurt and coriander.
