CHICKEN CHOW MEIN
Enjoy this speedy fake-away any night of the week, a dish that brings together succulent chicken breast, vibrant crunchy vegetables, and tender egg noodles in a delicate but simple marinade which creates the classic chow mein flavours.

Ingredients:
2 Chicken Breasts
1 teaspoon baking powder
2.5 tablespoons dark soy sauce
1 tablespoon cider vinegar
1 tablespoon brown sugar
1 garlic clove, finely diced or grated
1 onion, roughly diced
1 carrot, finely diced
1 green pepper, finely diced
200g (1/2 bag) bean sprouts
Egg noodles, fine or medium (2 nests)
1 tablespoon light soy sauce (for later)
Instructions:
Step 1: Begin by dicing the chicken breasts and placing them in a bowl. Add the dark soy sauce, cider vinegar, brown sugar, and finely diced garlic to the bowl, allowing the chicken to marinate in the mixture.
Step 2: While the chicken marinates, prepare the vegetables by dicing the onion, carrot, and green pepper. Fill a saucepan with water and bring it to a boil for cooking the egg noodles. Also, heat a large frying pan over medium heat.
Step 3: In the heated frying pan, sauté the diced vegetables in a little oil until they begin to soften. Once softened, set the vegetables aside.
Step 4: When the water in the saucepan is boiling, add the egg noodles and cook them according to the package instructions. While the noodles cook, add the marinated chicken along with the sauce to the frying pan. Allow the chicken to brown, then add the bean sprouts and sautéed vegetables to the pan. Cover the chicken and let it cook for a minute before stirring.
Step 5: After a minute, mix everything well in the frying pan. Add a teaspoon of light soy sauce to enhance the flavour. Once the egg noodles are cooked, drain them and add them to the chicken and vegetable mixture. Stir everything together thoroughly.
Serve!
