CHICKEN COCONUT SLOW COOKER SATAY CURRY

with savoury cumin rice

Serves 2-4

Ingredients

-1/2 small butternut squash cubed

-1 shallot or 1/2 onion finely diced

-2 chicken breasts, diced

-1 tbsp ginger purée

-1 tbsp garlic purée

-1 tbsp dark soy

-3 heaped Tsp curry powder

-2 tbsp peanut butter

-1 whole red chilli

-1 Tsp corn flour

-1 tin coconut milk

Cumin rice

-1 Tsp Cumin seeds

-1 Tsp oil

-1/2 tsp salt

-250g basmati rice

-500g cold water


Method

Add all of the ingredients for the curry in the slow cooker and mix really well.

Cook on high for 3 hours or low for 7-8 hours.

Once cooked add lots of fresh chopped coriander!

The cumin rice takes 15 minutes, simply toast the cumin seeds in the oil and add the rice.

Mix well until all combined in oil, add the water and simmer on medium heat for 10 minutes with a lid on.

Take off the heat leaving the lid on a rest aside for a further 5 minutes.

Fluff the rice and serve!
