CHICKEN PARMIGIANA
Chicken Parmigiana, also known as Chicken Parmesan, is a classic Italian-American comfort food dish. Tender chicken breasts are breaded, fried to crispy, then smothered in a rich tomato sauce, topped with melted mozzarella and Parmesan cheese, and baked until bubbly and golden.

Ingredients-
2 Chicken Breasts
1 cup Plain flour
1 Tsp salt
1 Tsp pepper
2 eggs
1 cup breadcrumbs
1 Tsp oregano
Pinch of salt & pepper
1 tbsp olive oil
4 garlic cloves, sliced
4 Sundried tomatoes, finely diced
1 tbsp tomato/chilli chutney (or red onion chutney, fig chutney, etc.)
1 tbsp tomato puree
10 basil leaves, rough chopped
1/2 lemon juice
1 tin plum tomatoes
1 Tsp salt
Parmesan
Mozzarella
Instructions-
Coat your butterflied chicken in the seasoned flour, egg, then seasoned breadcrumbs.
Leave aside while making the sauce.
In a pan, add the olive oil, garlic, sun-dried tomatoes, chutney, basil, tomato puree, and lemon juice. Soften and simmer for 5 minutes.
Add the plum tomatoes and mash, simmering for around 10 minutes until it becomes thick and rich.
Taste to check the seasoning and add salt if needed.
Cook your chicken in oil and butter for around 3 minutes per side, cut into the chicken if you aren’t confident in the cook.
Construct your Chicken Parmigiana! Layer the chicken, sauce, grated Parmesan, mozzarella, and a sprinkle of oregano.
Grill until the cheese is golden and melted.
Place on a roll, with pasta, salad, or whatever suits your needs.
