CHICKEN, PEA & FETA PASTA

Zesty & Creamy Chicken, Feta & Pea Pasta. The perfect summer pasta packing a whole lot of fresh punchy flavours.

Ingredients-

  • 100-150g leftover cooked

  • 1 tsp olive oil

  • 1/2 onion, roughly chopped

  • 2 garlic cloves, roughly chopped

  • 100g peas

  • 250ml stock

  • 1/2 block feta cheese

  • 200g fusilli pasta

  • 1 lemon

  • 10 mint leaves


Instructions-

  1. Fry the onions and garlic in the olive oil to soften for 5 minutes.

  2. Once softened add the zest of half a lemon, peas, 250ml stock, 10 mint leaves and 1/2 block of feta.

  3. Hand blend the sauce until it’s smooth and reheat in the pan, add in the cooked shredded chicken and heat through fully.

  4. Boil your pasta in salted water and once cooked, add to the sauce pan with the chicken.

  5. Finish with the juice of half a lemon and extra crumbled feta!
