CHICKEN SATAY BURGER
These homemade chicken patties are seasoned and served with a rich satay sauce. Accompanied by a refreshing smashed cucumber salad and crispy paprika chips, this burger tastes great and is really easy to prepare.

Ingredients-
Satay Chicken Burger:
500g Chicken Mince
1 tbsp soy sauce
1 tbsp sweet chilli
1 tbsp peanut butter
3 tbsp breadcrumbs
2 garlic cloves, grated
Zest of 1 lime
Satay sauce:
2 tbsp peanut butter
2 tsp dark soy
1/2 red chilli (optional)
1/2 can coconut milk
1/2 tsp cumin
1/2 tsp coriander
Juice of 1 lime
Smashed Cucumber Salad:
1/2 cucumber
Pinch of salt
Pinch of sugar
1 tsp rice wine vinegar or cider vinegar
1 tsp soy sauce
1 tsp sesame oil
Pinch of chilli flakes
Pinch of sesame seeds
Paprika Chips:
6 potatoes
Par boiled in salted water
1 tbsp plain flour
1 tsp paprika
1/2 tsp salt
2 tbsp olive oil
Instructions-
Satay Chicken Burger:
In a bowl, combine chicken mince, soy sauce, sweet chilli sauce, peanut butter, breadcrumbs, grated garlic cloves, and lime zest.
Mold the mixture into 3-4 burger patties.
Satay Sauce:
In a pan, add peanut butter, dark soy sauce, optional red chilli, coconut milk, cumin, coriander, and lime juice.
Simmer the sauce on low heat. If it splits, add a splash of water and mix vigorously.
Smashed Cucumber Salad:
Slice the cucumber into thin rounds.
Sprinkle with a pinch of salt and sugar. Add rice wine vinegar or cider vinegar, soy sauce, sesame oil, chilli flakes, and sesame seeds. Mix and let it marinate.
Paprika Chips:
Parboil the potatoes in salted water.
Toss the parboiled potatoes with plain flour, paprika, and salt.
Roast in 2 tbsp of olive oil at 200°C for 30 minutes.
Assemble:
Grill or pan-fry the chicken burger patties until cooked through.
Serve the burgers with the satay sauce, smashed cucumber salad, and paprika chips.
