CHICKEN SATAY TACOS
Pieces of grilled chicken, marinated in a rich satay sauce, are nestled in warm taco shells. The marriage of savoury and slightly sweet flavours, enhanced by aromatic spices, creates a taste sensation that's heightened by the crunchy texture of fresh veggies and the drizzle of creamy peanut sauce.

Ingredients-
Marinade
- 2 tbsp dark soy
- 1 garlic clove, grated
- 1/2 tsp cumin & coriander
- 1/2 lime juice
- 2 chicken breasts, cubed
Sauce
- 3 tbsp peanut butter
- 2 tbsp soy sauce
- 1 tbsp honey
- 1 garlic clove
- 1/2 lime juice
- 1/2 tsp cumin & coriander
- 2 tbsp water
- Chopped chilli optional
Crunchy Zesty Slaw
- 1/2 red pepper, thinly sliced
- 1/4 red onion, thinly sliced
- 1/2 large carrot, grated/thinly sliced
- 1/4 cucumber, thinly sliced
- 1/8 white cabbage, thinly sliced
- 10g chopped coriander
- 1/3 of the sauce
- 2 tsp mayo
- lime juice- honestly the more the merrier, lime juice makes this dish.
Marinate your chicken in the marinade ingredients, this can be done 24hrs in advance and left in the fridge!
Make the sauce and leave aside in a bowl.
You can skewer these and add 2/3’s of the sauce on top then bake at 200°c for 10 minutes.
Make your zesty slaw with all ingredients in the list, slaw doesn’t have to be cabbage, onion and carrot, make it your own! Add the final 1/3 of the sauce along with mayo and lime juice and stuff in the tacos along with the baked chicken and demolish!
I like to add the chicken to the mini tortilla wraps, fold over in half and bake in the oven until crispy then open and add the slaw.
