CHICKEN SOUVLAKI
This recipe features tender chicken skewers marinated with a savoury blend of herbs and spices, served alongside homemade flatbreads and refreshing tzatziki sauce. It's the perfect summer BBQ dish.

Ingredients-
For Tenderizing the Chicken:
2 chicken breast, diced
1 tbsp cornflour
1 tbsp cider vinegar
For Flatbread Dough (Makes 4 flatbreads):
175g natural yogurt
175g plain flour
1/2 tsp baking soda
For Skewer Marinade (Souvlaki) - Serves 2, 4 skewers:
1 tsp thyme
2 tsp oregano
Juice of 1/2 lemon
3 tbsp olive oil
1 tsp paprika
1/2 tsp salt
1/2 tsp pepper
1/4 tsp chili flakes
For Tzatziki (Serves 2):
250ml natural yogurt
1/4 cucumber, cubed
10 finely diced mint leaves
Juice of 1/2 lemon
1/2 tsp sugar
1/4 tsp salt
1/2 garlic clove
Instructions-
Tenderizing the Chicken:
Cut the chicken breast into chunks suitable for skewers.
In a bowl, combine 1 tbsp of cornflour and 1 tbsp of cider vinegar.
Add the chicken chunks to the mixture and refrigerate to tenderize.
Make Your Skewers (Add Mixed Peppers & Red Onion):
Rinse the cornflour and vinegar mixture off the chicken chunks.
Thread the chicken, mixed peppers, and red onion onto skewers.
Brush the marinade onto the skewers just before grilling on the BBQ.
Flatbread Dough (Makes 4 flatbreads):
In a bowl, combine 175g natural yogurt, 175g plain flour, and 1/2 tsp baking soda to form a dough.
Roll the dough into balls and cut into circles, each about 20cm in diameter.
Cook the flatbreads directly on the BBQ or a dry pan. They may puff up into balls if cooking on BBQ. Flip when slightly browned and repeat, then remove.
Skewer Marinade (Souvlaki):
In a bowl, combine 1 tsp thyme, 2 tsp oregano, juice of 1/2 lemon, 3 tbsp olive oil, 1 tsp paprika, 1/2 tsp salt, 1/2 tsp pepper, and 1/4 tsp chili flakes.
Mix well to create the marinade for the chicken skewers.
Tzatziki (Serves 2):
In a bowl, combine 250ml natural yogurt, 1/4 cubed cucumber, 10 finely diced mint leaves, juice of 1/2 lemon, 1/2 tsp sugar, 1/4 tsp salt, and 1/2 garlic clove.
Mix well and refrigerate until ready to serve.
Grill Your Skewers and Serve:
Cook your skewers on the BBQ, usually taking around 15-20 minutes, depending on the heat or use the grill.
They will be juicy and tender.
