CHILLI, LIME & HONEY SALMON

Salmon with a nice mix of flavour, including a sweet honey and soy dressing. Served with roasted new potatoes, cherry tomatoes, and green beans.

Ingredients-

  • 1/2 Salmon Side

  • 1 tbsp olive oil

  • 1 bag of new potatoes, sliced 6-7mm thick

  • 1/2 onion, sliced

  • 1 bag of green beans

  • 1 punnet cherry tomatoes

  • 1 lime, juice and zest

  • 2 tbsp honey

  • 2 tbsp dark soy sauce

  • 1 tsp chopped chilli (adjust to your spice preference)


Instructions-

  1. Preheat your oven to 180°C (350°F).

  2. Grab the largest oven tray you have and spread out the sliced new potatoes, making sure they are about 6-7mm thick (just under a centimeter).

  3. Add the sliced onion to the tray with the potatoes.

  4. Drizzle the olive oil over the potatoes and onion, and sprinkle with the chopped chilli. Mix everything well using your hands.

  5. Bake the potatoes and onion in the preheated oven at 180°C for 20 minutes.

  6. While the potatoes are baking, prepare the dressing. In a small bowl, combine the juice and zest of the lime, honey, dark soy sauce, and additional chopped chilli if you like it spicy. Mix well.

  7. After the potatoes have baked for 20 minutes, add the cherry tomatoes and green beans to the tray. Mix them in with the potatoes.

  8. Place the salmon side on top of the vegetables and drizzle the dressing over the salmon.

  9. Return the tray to the oven and bake for an additional 20 minutes, or until the salmon is cooked through and the vegetables are tender.

  10. Finish the dish with fresh lime slices and additional chopped chilli for an extra kick, if desired.
