  • 1 garlic clove, grated

  • 1 tsp chipotle paste (adjust to taste)

  • 1 tsp dark soy sauce

  • 2x 100g asparagus tips

  • 2x 500g new potatoes

  • 240g salmon fillets (2)

  • Olive oil (for brushing)

  • Salt (for seasoning)

Instructions-

  1. Preheat your oven to 200°C (390°F).

  2. Boil the new potatoes in salted water for 15 minutes. Drain and set them aside.

  3. Crush the boiled new potatoes with a flat-bottomed glass.

  4. Place the crushed new potatoes on a baking tray, brush them with olive oil, and season with salt. Add the grated garlic clove on top.

  5. Bake the crushed new potatoes in the preheated oven for 25 minutes, until they become golden and crispy.

  6. While the potatoes are baking, prepare the dressing. In a small bowl, mix the honey, chipotle paste, and dark soy sauce. Adjust the amount of chipotle paste to your preferred level of spiciness.

  7. After 25 minutes, remove the tray from the oven.

  8. Add the salmon fillets and asparagus tips to the tray.

  9. Drizzle the dressing over the salmon and asparagus.

  10. Return the tray to the oven and bake for an additional 15 minutes, or until the salmon is cooked through and the asparagus is tender.

  11. Serve your Chipotle Honey Salmon alongside the crispy crushed new potatoes.
