CHORIZO BEANS ON TOAST
This recipe is bursting with the richness of chorizo (choose the spicy one if you like a kick), the creaminess of beans, and the zing of red onions and peppers. Perfect when served on toast accompanied by a runny egg or added to a cheese toastie.

Ingredients:
1/2 red onion, finely diced
1 red pepper, roughly chopped
1/2 chorizo ring, roughly chopped
1 tin haricot/cannellini beans, drained
1 tbsp tomato/chilli or red onion chutney (optional)
1 tin plum tomatoes
1/2 tin water or 1 full tin if feeding 4 people.
Salt and pepper to taste
Instructions:
Heat a frying pan over medium heat and add the finely diced red onion. Sauté until softened and translucent.
Add the chopped red pepper and chorizo to the pan. Sauté for a few minutes until the chorizo releases its oils and the peppers begin to soften.
Stir in the drained beans and optional tomato/chilli or red onion chutney. Mix well to combine.
Pour in the tin of plum tomatoes, breaking them up with your hands or a masher as you add them to the pan. Add half a tin of water to create a sauce. Season generously with salt and pepper.
Allow the mixture to simmer gently for about ten minutes, stirring occasionally, until all the ingredients are heated through.
Serve the chorizo and beans on toasted bread slices, accompanied by a perfectly cooked egg for a delightful breakfast or brunch. Alternatively, use the mixture to create a delicious toastie by layering it with cheese between two slices of bread and toasting until golden and crispy.
