CORNED BEEF HASH
The favourite, classic comfort food dish that's simple to prepare and packed with flavour. It combines diced potatoes, carrots, and cubed corned beef in a savoury broth, resulting in a hearty and warm meal. The addition of both beef and chicken stock cubes, along with a sprig of thyme, enhances the depth of flavour in this dish. You can customize the thickness of the hash to your liking with gravy granules or a cornflour slurry.

Ingredients-
2 tbsp oil
1 large onion, finely diced
6 medium/large potatoes
4 carrots
1 beef stock cube
1 chicken stock cube
1/2 tsp white pepper
1 sprig thyme
1 tin corned beef
Water
Salt (to season at the end)
Instructions-
In a large pan, heat the oil and add finely diced onions. Cook until they become golden and soft.
Prepare the potatoes and carrots by peeling and cubing them. Cut some of the potatoes smaller (around 1-2cm cubes) and leave some larger (around 4-5cm cubes).
Add the prepared potatoes and carrots to the pan with the onions.
For the stock, use one beef stock cube and one chicken stock cube.
Add water to cover the potatoes completely, with an additional inch of water above them. Boil the potatoes until they are almost soft.
Cube the tin of corned beef and add it to the pan. Cook for an additional ten minutes.
Taste and season with white pepper and salt, depending on your stock. You may not need salt, as the stock cubes can provide sufficient seasoning.
If you prefer a thicker consistency, you can add gravy granules or create a cornflour slurry to thicken the dish.
Serve the Corned Beef Hash with crusty buttered bread and your choice of accompaniments, such as pickled beetroot, red cabbage, mushy peas, or brown sauce.
