Ingredients-

For the Chicken and Pasta:

  • 3 chicken breasts, diced

  • 1 tsp salt

  • 1 tsp pepper

  • 2 tbsp flour

  • 400g fusilli pasta

  • 1 broccoli, cut into small florets

For the Creamy Sauce:

  • 450g chicken or vegetable stock

  • 200ml crème fraiche (or low-fat cream cheese)

  • 125g grated cheddar

  • 50g Parmesan

For the Seasonings:

  • 1 tsp dried oregano

  • 1 tsp dried parsley

  • 1 tbsp paprika

  • 1 tsp black pepper

For Added Greens:

  • 100g spinach

  • 3 celery stalks, finely diced


Instructions-

  1. Begin by dicing the chicken and coating it with salt, pepper, and flour.

  2. Cut up the broccoli and weigh out the fusilli pasta. In a large pan, bring water to a boil and add a pinch of salt. Cook the pasta and broccoli until they are tender, then drain immediately.

  3. In another pan, add a splash of oil and brown the diced chicken.

  4. To the browned chicken, add the dried oregano, dried parsley, and paprika. Mix well. If you prefer some spice, this is the time to add 1 tsp Cajun seasoning if you like a little spice.

  5. Add the spinach to the pan, followed by the cooked pasta and broccoli. The heat will cause the spinach to wilt.

  6. Next, add the chicken or vegetable stock, crème fraiche, black pepper, grated cheddar, and Parmesan cheese. Mix the ingredients thoroughly until the sauce is creamy and well combined.

  7. Serve your Creamy Chicken and Broccoli Pasta immediately, garnished with extra cheese and a sprinkle of fresh herbs.
