CREAMY PARMESAN & PARSLEY SAUSAGE PASTA

Sausages, onions, garlic, and green peppers together with cooked pasta, accompanied with a rich, creamy sauce with added grated Parmesan and fresh parsley.

Ingredients-

  • 8 sausages

  • 240g dried penne

  • 100g parmesan

  • Fresh parsley (3 tbsp)

  • 2 onions

  • 6 garlic cloves

  • 4 green peppers

  • 2 tbsp plain flour

  • 400ml stock

  • 200ml milk

  • 1/2 Tsp salt

  • Pepper


Instructions-

  1. Begin by roughly chopping the onions, garlic, and green peppers. Soften them in a pan with a little oil over medium heat.

  2. Once softened, add the sausages taken out of their skins and break them up with a spatula. Cook until the sausages are browned.

  3. Add the plain flour to the pan and fry for 2 minutes, allowing it to meld with the sausage and vegetables.

  4. In a separate pan, cook the penne pasta in salted water according to the package instructions.

  5. In the sausage pan, add the milk and stock, stirring until the mixture bubbles and thickens.

  6. Finely grate the Parmesan and finely chop the fresh parsley.

  7. Once the pasta is cooked, add it to the sausage mixture in the pan, along with the Parmesan and fresh parsley. Toss to combine.

  8. Finish with an extra sprinkle of Parmesan and black pepper.
