CREAMY SAUSAGE PASTA

Ingredients-

  • 8 Pork Sausages

  • 4 Garlic Cloves

  • 1 Tsp Black Pepper

  • 1 Tsp Oregano

  • 1 head Broccoli, cut into small florets

  • 1 mug Peas, defrosted in water

  • 1 tub Cream Cheese (200g), lighter option works well

  • 500g Fusilli

  • Parmesan (optional)


Instructions-

  1. Remove the sausages from their casings and add them to a pan with a splash of oil. Break them up as they brown, and use a potato masher to achieve a finer consistency. Continue cooking until the sausages are well-browned.

  2. Defrost a mug of frozen peas in water and set aside.

  3. In a large pan, heat water and salt well to prepare for the pasta. Add the pasta, preferably rigatoni or fusilli. These shapes work best for this recipe due to their ability to hold the sauce.

  4. While the pasta cooks, add the sliced garlic, oregano, and black pepper to the sausage meat and cook until fragrant.

  5. When the pasta is about halfway cooked, add the broccoli florets to the boiling water to cook alongside the pasta.

  6. Add three ladles of pasta water to the sausage meat when the pasta is almost cooked. Then, add the entire tub of cream cheese and mix well to create a creamy sauce. Reduce the heat to a simmer.

  7. Drain the pasta and broccoli, but don't discard the pasta water. Pour the pasta water into a jug and keep it to the side.

  8. Mix the pasta, broccoli, and sauce together in a large pan. Add another ladle of pasta water and gently mix to reach your desired sauce consistency. You can add more pasta water if needed.

  9. You can serve the dish with Parmesan, or if you prefer, you can add grated Parmesan directly to the pasta to season and thicken the sauce.
