CRISPY LAMB FILO PARCELS

Crispy Lamb Filo Parcels are a combination of minced lamb and aromatic spices wrapped in flaky filo pastry. These parcels are perfect as an appetizer or a tasty snack.

Ingredients-

  • 500g minced lamb

  • 1 tbsp olive oil

  • 1 small red onion, finely chopped

  • 1 clove of garlic, grated

  • 1/2 tsp ground cinnamon

  • 1/2 tsp ground cumin

  • 1/2 tsp ground coriander

  • 2 tbsp tomato puree

  • 1 tsp chilli paste (adjust to taste)

  • 10 mint leaves, finely chopped

  • 4 tbsp chopped fresh coriander

  • 1/2 tsp salt

  • 1/2 tsp black pepper

  • 8 sheets of filo pastry

  • Melted butter for brushing

  • Nigella seeds and sesame seeds (optional, for topping)


Instructions-

  1. In a pan, heat the olive oil over medium heat. Add the finely chopped red onion and sauté until softened.

  2. Grate the garlic into the pan and add the minced lamb. Break up the lamb as it browns, ensuring it has a fine consistency.

  3. Once the lamb is almost browned, add the ground cinnamon, ground cumin, ground coriander, tomato puree, chilli paste, chopped mint leaves, chopped fresh coriander, salt, and black pepper. Mix well to combine. Cook until the lamb is fully browned and the flavours are blended. Set aside.

  4. Preheat your oven to 180°C (350°F).

  5. Carefully remove the filo pastry sheets from their packaging. Cut each sheet in half lengthwise.

  6. Use a damp, clean tea towel to cover the remaining filo pastry sheets to prevent them from drying out.

  7. Take two halves of filo pastry sheets and brush them with melted butter. Place one of the sheets on top of the other, slightly offset.

  8. Spoon the lamb filling onto the top right corner of the stacked filo pastry.

  9. Fold the top right corner over the filling to meet the bottom edge, creating a triangle shape. The remaining pastry should stay as a rectangle coming from this folded triangle.

  10. Keep folding the triangle into the pastry, creating a sealed edge on all sides.

  11. Brush the top of the parcel with melted butter and sprinkle with nigella seeds and sesame seeds, if desired.

  12. Repeat the process with the remaining filo pastry and lamb filling to create more parcels.

  13. Place the parcels on a baking tray and bake in the preheated oven for 20-25 minutes, or until they are golden brown and crispy.

  14. Serve the Crispy Lamb Filo Parcels hot and enjoy these delicious, savoury treats!
