EXTRA TASTY ROAST CHICKEN

In my opinion, this is the best way to roast a chicken. With a unique blend of spices, herbs, and seasoned butter, this recipe transforms an ordinary chicken into the extraordinary.

Ingredients-

  • 1 X-large chicken (about 2kg)

  • 1 large garlic clove, finely grated

  • 4 tbsp salted butter

  • 2 tbsp paprika

  • 2 tsp oregano

  • 1 tsp turmeric

  • 2 tsp onion granules

  • 1 tsp black pepper

  • 1 chicken stock cube


Instructions-

  1. Preheat your oven to 180°C (350°F).

  2. In a bowl, mix together the finely grated garlic, salted butter, paprika, oregano, turmeric, onion granules, and black pepper. This will create a flavourful seasoning mixture.

  3. Gently separate the skin from the chicken breast. To do this, use a dessert spoon and carefully slide it under the skin, gently pushing and working your way to create a pocket between the skin and the breast. Be cautious not to tear the skin.

  4. Using the seasoned butter mixture, carefully spoon it under the skin of the chicken, making sure it's distributed evenly over the breast and thigh areas. This helps infuse the meat with flavour and ensures it remains moist during cooking.

  5. Save about a tablespoon of the seasoned butter to rub over the outside of the chicken.

  6. Dissolve the chicken stock cube in a small amount of hot water to create a concentrated chicken stock.

  7. Place the seasoned chicken in a roasting pan and pour the diluted chicken stock around it.

  8. Cover the roasting pan with a lid or aluminium foil. This will help keep the chicken moist during the initial part of cooking.

  9. Roast the chicken in the preheated oven, covered, for approximately 1 hour.

  10. After the first hour, remove the cover and continue roasting for an additional 20-30 minutes or until the chicken is fully cooked and the skin is golden and crispy.

  11. To ensure the chicken is done, insert a meat thermometer into the thickest part of the meat. It should read at least 75°C (165°F).

  12. Once the chicken is perfectly cooked, remove it from the oven and allow it to rest for a few minutes before carving.
