GARLIC & HERB CRUSTED WHITEFISH

Basa fillets with a crispy and tasty crust made of breadcrumbs, Parmesan cheese, fresh parsley, and garlic. It's served alongside creamy mashed potatoes, green vegetables and lemon.

Ingredients-

  • 2 Basa Fillets (or an alternative white fish)

  • 4 tbsp breadcrumbs

  • 4 tbsp fine grated Parmesan

  • 1 tbsp fresh chopped parsley

  • 1 garlic clove, grated

  • 2 tbsp olive oil

  • 2 tbsp yellow/Dijon mustard

  • Black pepper (optional, for seasoning)

For the Mash Potato & Green Veg:

  • Creamy mashed potatoes

  • Green vegetables (of your choice)

  • Fresh lemon wedges (for serving)


Instructions-

  1. Preheat your oven to 180°C (350°F).

  2. Defrost your basa fillets if frozen or use fresh alternative fish.

  3. In a bowl, mix together the Parmesan, breadcrumbs, fresh chopped parsley, and grated garlic. Add the olive oil and combine to create the breadcrumb mixture.

  4. Place the basa fillets on a lined baking tray and brush them with the yellow or Dijon mustard.

  5. Optionally, sprinkle a bit of black pepper over the fish.

  6. Evenly coat the fish with the breadcrumb mixture, pressing it gently onto the fillets.

  7. Bake the fish in the preheated oven at 180°C for 20-25 minutes, or until the crust is golden and the fish is cooked through.

  8. While the fish is baking, prepare creamy mashed potatoes and your choice of green vegetables.

  9. Once the fish is done, place it alongside the mashed potatoes and veg. Prepare fresh lemon wedges for a hint of zest.

  10. Squeeze the lemon wedge over the fish, serve and enjoy.
