Ingredients-
85g Pancetta
Cream cheese (Garlic & Herb)
Pasta water
1 tsp cornflour & 1 tsp cold water
1 mug Peas
Lemon zest & juice
50g Parmesan (to finish)
300g Fusilli
How to-
Cook the fusilli according to package instructions. Reserve a mug of pasta water before draining.
In a pan, crisp up the pancetta until golden brown.
Add a generous dollop of garlic and herb cream cheese to the pan, stirring until melted and combined.
Mix cornflour with cold water, then add to the pan, stirring continuously to thicken the sauce.
Toss in the peas, allowing them to cook through in the creamy sauce.
Introduce lemon zest and juice to brighten the flavours, giving the dish a refreshing twist.
Incorporate the cooked fusilli, ensuring it's well coated in the sauce. If needed, use reserved pasta water to adjust the consistency.
Finish the dish with a generous sprinkle of Parmesan, melting into the pasta for added richness.
