GARLIC PARMESAN CHICKEN TRAYBAKE
Garlic Parmesan Chicken Traybake features tender chicken thighs coated in garlic and Parmesan butter. Paired with roasted potatoes and fresh asparagus, this traybake is a delightful, complete meal.

Ingredients-
4 chicken thighs
Small handful of parsley
2 garlic cloves
3 tablespoons butter
3 tablespoons grated Parmesan
6 potatoes
250g asparagus
Olive oil
Pinch of salt and pepper
Zest of 1/2 lemon
Instructions-
Step 1: Preparing Crispy Chicken Skin
Begin by removing the skin from the chicken thighs by gently pulling it off. Spread the chicken skin on a tray lined with parchment paper and season it with a pinch of salt and pepper.
Bake the chicken skin at 200°C for 15-20 minutes, or until it becomes crispy and golden. Once done, remove it from the parchment paper and place it on a kitchen towel to absorb any excess fat.
Step 2: Preparing the Traybake
Cube the potatoes into 2cm pieces and add them to an oven tray. Drizzle 1 tablespoon of olive oil over the potatoes and season with a pinch of salt and pepper.
Roast the potatoes in the oven at 200°C for 30 minutes. If you're concerned about them sticking, you can line the baking tray with parchment paper.
Step 3: Preparing the Garlic Parmesan Butter
Mince the garlic, finely chop the parsley, and mix them with 3 tablespoons of butter and 3 tablespoons of grated Parmesan cheese.
Coat the tops of all 4 chicken thighs with the garlic Parmesan butter and set them aside to come to room temperature while you wait for the potatoes to roast.
After 30 minutes, remove the potatoes from the oven and give them a good mix or unstick them from the tray if needed. Zest half a lemon over the potatoes.
Step 4: Assembling the Traybake
Place the asparagus between the roasted potatoes in the tray.
Lay the buttered chicken thighs on top of the potatoes and asparagus.
Grate a little more Parmesan cheese over the chicken.
Step 5: Baking the Traybake
Bake the traybake at 200°C for an additional 20-25 minutes, depending on the size of the chicken thighs. Ensure that the chicken is fully cooked.
If you have small trays, it's recommended to use two trays and make some extra herby/garlic butter to spread on the second tray. This allows everything to have more space in the trays and cook evenly.
