SERVES makes 12-15 cookies
Ingredients-
230g softened butter
120g brown sugar (110g granulated sugar & 1 tbsp treacle)
50g caster sugar
2 large eggs
1 tsp vanilla
380g plain flour
1 tsp bicarbonate of soda
1/2 tsp baking powder
1 tsp salt
Additional for Triple Chocolate:
1 tbsp dark cocoa powder
1 tsp water
Up to 250g mixed chocolate (dark, milk, or white), diced into 1cm chunks
Additional for Oat & Raisin:
100g oats
50g raisins
Additional for White Chocolate, Macadamia and Raspberry:
94g bag white chocolate buttons
200g chopped Macadamia nuts
1 fresh chopped raspberry per cookie
Additional for Hazelnut & Chocolate Chip:
100g roasted hazelnuts
100 chocolate chips
Instructions-
In a large bowl, cream together softened butter, brown sugar, caster sugar, and eggs until light and fluffy.
Add vanilla and mix well.
In a separate bowl, sift together flour, bicarbonate of soda, baking powder, and salt.
Gradually add the dry ingredients to the wet mixture, ensuring thorough mixing.
Fold in your chosen additional ingredients.
Preheat the oven to 180°C and line baking trays with parchment paper.
Scoop cookie dough onto the trays, leaving space for spreading.
Bake for 10-12 minutes or until the edges are golden brown.
Allow cookies to cool on the trays for a few minutes before transferring to a wire rack.
