GREEK CHICKEN & POTATOES

This is in my top ten favourite recipes. A flavoursome broth to mop up with some crusty buttered baguette, tender braised potatoes and vegetables and a juicy Greek style chicken breast.

Ingredients-

Greek Chicken Marinade:

- 2 Chicken Breasts
- 1/2 tsp thyme
- 2 tsp oregano
- 2 tsp paprika
- 1/2 lemon zest
- 1 grated garlic clove
- 1/2 tsp salt & pepper
- 1/2 tsp chilli flakes- optional
- 1 tbsp olive oil

-3 potatoes
-1 onion
-2 garlic cloves
-1 pepper
-2 tomatoes
-600ml stock
-100-200ml white wine (optional)


Instructions-

Cut all veg (potato, peppers, tomatoes, onion, garlic) into chunks and add to an oven dish with the stock.

Roast for 40minutes at 175°c until potatoes are soft. This may need longer, cook without a lid until potatoes are fully cooked and stock is minimal, but you still want some to mop up!

Turn up the oven to 200°c and add marinated Greek chicken and bake for 20-25 minutes until chicken is 75°c core temp.
