HARISSA SWEET POTATO AND RED LENTIL SOUP
A rich and velvety blend of sweet potatoes, red lentils, and spices. The addition of rose harissa brings a subtle heat, while fresh herbs and a touch of cream contribute to its silky smooth texture. This hearty soup is a celebration of flavours, providing a perfect balance of warmth and nourishment.

Ingredients-
1 small onion, roughly chopped
2 garlic cloves
2-3 sweet potatoes (approximately 900g)
80g red lentils
1.4 litres stock
1 tsp rose harissa
Large handful of fresh parsley
2 large handfuls of fresh coriander
Oil for frying
Cream (double cream/partly cream or vegan alternative)
Instructions-
In a large pan, fry the roughly chopped onion in oil.
Add peeled garlic cloves and peel/cube the sweet potatoes.
Add sweet potatoes after the onion is browned.
Add red lentils, rose harissa paste, and the stock to the pan.
Boil for around 30 minutes until all vegetables are fork-tender.
Use a hand blender to blend the soup until smooth.
Add a large handful of fresh parsley and two large handfuls of fresh coriander and blend until fully combined.
Add a touch of cream (double cream/partly cream or vegan alternative) to create a silky smooth texture.
Season the soup as necessary. Taste before adding salt, as the stock may provide enough saltiness.
