HEARTY CHICKEN STEW
Chunks of chicken, a mix of fresh vegetables, and a blend of herbs combine to create a delicious, hearty stew. It's a one-pot wonder that's both easy to prepare and packed full of flavour, making it an ideal choice for a wholesome family dinner.

Ingredients-
2 chicken breasts, diced
2 tbsp plain flour
1/2 tsp oregano
1/2 tsp rosemary
1/2 tsp thyme or sage
1/2 tsp black pepper
2 celery stalks
4 carrots
2 leeks
6-8 garlic cloves
500g new potatoes, cut into 2cm thick chunks
1300-1500ml water
2 chicken stock cubes
1 Tsp Worcestershire sauce
Splash of milk (optional)
1 tbsp olive oil
Instructions-
In a bowl, mix the plain flour, oregano, rosemary, thyme (or sage), and black pepper. Coat the diced chicken with this dry mixture and set it aside.
In a large pot or pan, heat 1 tbsp of olive oil. Add the finely diced celery stalks, carrots, leeks, garlic cloves, and new potatoes. Fry these vegetables for 10-15 minutes or until they become soft.
In a separate pan, fry the coated chicken until it's browned, then add it to the vegetables.
Add 1300-1500ml of water to the pot, along with 2 chicken stock cubes and 1 tsp of Worcestershire sauce.
Simmer the stew for 35-45 minutes or until the potatoes are completely soft.
If you'd like, you can finish the stew with a splash of milk to make it slightly creamy.
Serve the chicken and vegetable stew with some crusty buttered bread and enjoy!
