HERB & GARLIC CRUSTED BEEF RIB ROAST

The Herb & Garlic Crusted Beef Rib Roast is a crowd-pleasing centrepiece for your dinner table. You'll need a few simple ingredients and a meat thermometer to ensure it's cooked to perfection. This method is reverse searing which allows the perfect cook in the centre then finishing with an external cook and a perfect golden crust.

Insgredients-

Herb & Garlic Butter:

  • 2 tsp fresh rosemary, finely chopped

  • 2 tsp fresh thyme, finely chopped

  • 2 garlic cloves, finely grated

  • 4 tbsp butter

  • 1 tsp salt

  • 1 tsp pepper

For the Roast:

  • Rib Roast Beef (any size you want; 2 ribs serve around 8 people)

  • 1 meat thermometer (not for oven use, but to check internal temperature)


Preparation-

  1. Take the rib roast out of the fridge 3 hours before cooking.

  2. Coat the roast with the ‘Herb & Garlic Butter’ mixture.

  3. Lay the roast on a bed of carrots, celery, onion, garlic, thyme, and rosemary.

Cooking-

  1. Preheat your oven to 120°C (no hotter!).

  2. Use a meat thermometer to achieve the ideal internal temperature of 47°C for a perfect medium-rare roast.

  3. Cook for 1 hour at 120°C and check the temperature periodically (every 20-30 minutes).

  4. When the roast reaches 47°C, remove it from the oven, cover it with foil, and let it rest for 30 minutes to 1.5 hours. Resting in advance makes your job easier!

  5. Just 30 minutes before serving, return the roast to the oven at 200°C for 15 minutes to achieve a beautiful, golden brown finish.

  6. Finally, let it rest for another 15 minutes to allow the juices to redistribute.
